So i guess google taking their time updating their stuff

All iOS efforts has been de-prioritized until Pixel Buds and Pixel2 issues are resolved.

I dont think the teams that are working on Pixel Buds and phones are the same as the ones dedicated to optimize and update their existing apps.
Better answer: They have no reason to rush it. It's working fine as-is, and still being used by many. Or not, since many people may also be using other mail clients. Fixing or improving Gmail app when it's not broken does not benefit them in any way.
Full-screen Google maps would be nice, but a larger display doesn't really add much to the overall functionality.

I’m guessing that Google plans to keep their apps attractive to iPhone so we don’t stop using them.
I don’t use any Google apps, but have a gmail account. I logged into YouTube on Safari the other day (I rarely do that) and quickly received an email titled, “[real name], your new Apple iPhone doesn't have the latest Google apps”
“Welcome to Google on your new Apple iPhone
Based on your Google Account activity, we recommend using these apps to stay organized, collaborate, and keep your account secure.”
They suggested GMail, Google Photos, and Google Maps.

Seems like updates are coming out little by little: Google Introduces iPhone X Support for Docs, Sheets, and Slides iOS Apps
Google Keep was updated yesterday, Google Earth today, etc.

Google Maps has also been updated today as well.
Indeed it seems Gmail and Inbox by Gmail aren't updated yet to iPhone X although there was an update on the 20th of November.
Some great 3rd party e-mail apps which also support Gmail accounts are Spark and Email / Edison Mail.
