I've noticed there are a lot of different 'programs' to use or referred to.
Yellowsn0w, Redsn0w, Purplra1n, QuickPwn, Pwnage, etc.

My question is what are the differences, if any?
Are some of them just for Mac or PC?

How do you choose the 'right' one? Thanks!

Depends on what you want to do, jailbreak or unlock
Model of phone 3G, 3GS, 2G
Mac or PC
Version of firmware you want to use
 
some are just used for mac such as pwnage tool

yellowsn0w isnt a jailbreaking program its something found in cydia to unlock your phone

well I am really get confused with this as well. I have an apple unlock iPhone 3G so which one should I use to jailbreak my iPhone?

Only tool available at this time for 3.1 is Pwnage Tool for Mac. It does work on the 3G and if you are Apple Unlocked, you're fine.
