I know I could try it myself but thought it was only for developers right now. So will it really change the way the iPad is used or only time will tell ?

I tried it. It's great. Even rather stable. It WILL improve your experience, but it's good the way it is now with 10, and it's probably a good idea to wait a while.

Thing is, 11 is stable now, so that's odd, it being so early. This is good.

So will Files work with apps like nPlayer for my media files or no ? Will I be able to play a video I transfer to files with nPlayer somehow ?

Don't ask what iOS 11 can do for your iPad Pro... ask what your iPad Pro can do with iOS 11.... and with larger screens*, ProMotion, True Tone, 4GB, fast charging, A10X and better cameras.... it can do a lot on iOS 11.

* where applicable

I had iOS 11 on mine for a couple of days but today I reverted back. Although "stable" it's still full of bugs, which is to be expected, and I'll wait until beta 2 and give it another go.

That being said, iOS 11 on the iPad is definitely a great step forward.

Just thinking of the number of taps per task saved.

In iOS 10, switching to an unused app in slide over takes
1 slide,
2-3 scrolls to find the app
1 tap to open it.

in iOS 11
It takes
1 slide up from edge
1 drag to right or left

The number of taps each of the task saves means greater productivity.
