I'll be getting the iPad Mini and I'm intrigued about the idea of having an ultraportable device that I can occasionally dock into a workstation w/ monitor/keyboard/trackpad. My understanding is that the state of external display support is pretty poor. Hopefully that situation will improve, but in the meantime I'm curious if anyone has been using a similar setup with their iPad. I know some apps have been updated to support a display like this. Is the experience too limiting/frustrating or does it work pretty well in practice?

I tend to do it for remote desktop. I have several USB C monitors but I mainly use a 17.3in one.
Jump desktop can take full advantage of the 16:9 display and use my magic keyboard (including trackpad).
In this case the iPad acts as a "thin client" for my Windows desktop.
Other than that the only situation when I use an external display is to watch movies in 16:9 on an external monitor. I don't do it often since, just as with remote desktop, you cannot use the tablet at the same time (something that I can do instead with my Samsung Galaxy Tab S7+)

As above - that’s exactly how I use mine with my Mac mini. I use junk desktop to log in and then switch to sidecar as it’s a much more native experience.
Monitor support pretty poor but a few apps support it - hopefully they’ll deal with it but we’ve been waiting for some time already. There’s an app called shiftscreen which is an interesting idea to help if you use web apps, but in practice it’s a little bit finicky to use.
Keyboard and mouse (or trackpad) works great though.
