Some Topics not listed in Feedback Assistant for creating a feedback

The creation of new feedback upon login with Apple ID on feedbackassistant.apple.com and on feedback assistant app, do not list the topics "Developer Tools", "Enterprise and Education", "MFi Technologies", "Web Services & SDKs".

I would pick the closest category and then make sure to point out in the dialogue box what you are really trying to provide feedback for.

Agreed.
But why on earth would those options be curtailed on a sudden, when they were indeed visible a few days ago.

The drop down options of problem areas is also curtailed, with the items previously listed below “Something else not on this list” not visible at all now.

This issue occurs on both the website feedbackassistant.apple.com and on the feedback assistant app on MacBook and iOS and has started recently.
