I upgraded my iPhone 4 to iOS 5 and in iTunes my playlists are newest at the top and oldest at the bottom. However, with iOS 5 on my iPhone the playlists are oldest at the top and newest at the bottom.

I have a lot of songs in these playlists and obviously want to hear the newest music first instead of scrolling to the bottom.

Any way to fix this?

I discovered it matters what mode you are viewing when you sort. I was using list with small album art to sort, but it didn't sort my iPhone 4 music the way it was sorted in iTunes. When I switched to the list view with no art and sorted again, it updated the iPhone's list to match.

So, try that.
