why are songs from iTunes music greyed out , when, i add them to my music
As they are being downloaded or ripped by iTunes, they should be greyed out because the file is unavailable as it's being written to.

Once they're done being ripped/downloaded, they should behave normally and stop being greyed out.

I'm not quite sure that was your question, though.

As you say that's what 'should happen , but once they're 'ripped/downloaded', as you said, they are still greyed out .

PS. I've been in touch with apple and the bloke that I spoke to said regarding apple music that they may not necessarily be sent by the label for release until later. Which if he's right may explain it.

Tracks that are greyed out in an album song list or playlist are not available for streaming through Apple Music. These are often tracks that are indicated as being available as part of an "Album Only" purchase in iTunes music store, a gimmick used by labels to make people buy full albums instead of individual tracks.

Yes but I don't think or have never seen in the Apple Music, where Apple stream Albums and individual song, "Album Only" only for sale Albums in iTunes

In Apple Music, they are just greyed out. If you own the album (have it in your library, or have it match to cloud library) it will be playable. The "Album Only" tag is only in iTunes music store, which is different than the Apple Music catalog.

For lack of a better example, the Les Miserables Complete Symphonic Recording has the first track greyed out in the AM catalog. In iTunes, it is labeled as "Album Only" in the Price column. This album is in my library from a CD rip, which then I "matched" to my iCloud Music library. The first track is available for play for me.

Likewise Adele's 25 album, which is not even listed in AM catalog. I matched it from a CD rip into my iCloud music library. I can now stream it from any of my devices using AM.

I had an issue like this, turned out the tracks were "unchecked" in the list view. Checking all the songs made them ungreyed and playable in album view.
