The occasional problem is that the colour will drain from the screen - everything will look washed out. The fix is to go into Apple TV Video and audio settings and swap the chroma to the one that isn’t being used ( it doesn’t matter to me which one - to my eyes they both look the same).
I have never seen the colour fade away, it happens say when the Apple TV has been asleep and it is not consistent - the problem will happen just once in a while, but it has been happening across multiple Sony software updates and Apple TV os updates.
Have checked the TV settings themselves and cannot see what may be causing the problem, so any ideas?
Must admit I’ve never seen anyone else report this problem, and the fix is fairly innocuous, but it would be nice if it just wasn’t happening.

Try the usual potential remedies for any such problems:
  • Connect AppleTV to other HDMI ports and see if it repeats. Sometimes, it's a bad HDMI port.
  • Swap HDMI cable with another (highest quality) one and see if it repeats. Old HDMI cables are not always up to par with latest transfer standards. Also, if you have a pet, check the HDMI cable for chew marks. One wrong nibble could be to blame.
  • Restart (reboot) AppleTV and see if it repeats.
  • Unplug TV, wait a few minutes and plug it back in (to fully reboot the tech within it). Sometimes power surges/lightning can make the internal tech get buggy. Most people never think to reboot their TV but it's a good idea from time to time.
And if you happen to have a second AppleTV, swap it in place of this one for a test period of time and see if it repeats. Or temporarily swap AppleTVs with a friend to see if it will repeat.

Much of this is about narrowing in on exactly what is the cause of the problem: port(s) vs. cable vs. AppleTV needing rebooted vs. TV being rebooted vs. AppleTV itself, etc. If you try each of those, you may discover exactly which piece of it all is at fault and then can address the specific cause. As is, it can be any of them. Be deduction by testing one change at a time will usually narrow in on exactly what is to blame... and thus a potential fix.

I hope any of these help.

Thank you, I’ll give the HDMI port and cable suggestions a go. The tv and box are switched off at the wall every evening.

I've had this for quite some time now, figured it was something with my setup including an amp/receiver and baluns etc. I just restart/reboot the AppleTV and it looks fine again afterwards. I think restarting the TV works too. Feels like something goes wrong when the TV first presents the input signal after being turned on

Try the chroma switch in settings - it is faster, if you particularly prefer one over the other then you can immediately switch back. My TV takes a while to restart.

Is your TV a Sony?
