Of the three sort options on the iTunes App Store: new release, name, and most popular, how does most popular work? Is it most downloads total? For a given period of time? Or does it not have to do with downloads. Does it change when apps are updated?

I would like to know how many applications I'm selling compared to others. I'm pretty sure I understand release date and name...:p

These sort options still exist on the App Store via iTunes on your computer if you click on a category, eg "Entertainment".

Oh sorry, I never go into categories, maybe I might start...

But most popular is probably a combination of most downloads, the reviews, and overall ones that apple hears about the most

I'm pretty sure most popular has to do with downloads over a period of time (24 hours probably)
