I used a display model earlier today at Best Buy (I preordered a 3G one but wanted to try it out for real. thought it might help satisfy my cravings. just made it worse! D=)

Anyway: The sound was really weird on it.
I played "Fireflies" video on the iPod and i could barely hear it.
Then I tried Step Brothers and i could also barely hear it. had to put it up to my ear.

Plants vs Zombies: Nope.
Reuters: Nope.

But then when i played Tap Tap whatever, i could hear it.

And finally i tried a Nelly Furtado video and could hear it clear as day.

So...

Have any of you guys encountered any discrepancies in the volume from app to app?

Or was the display model just faulty?

I have noticed this on mine. Biggest difference for me are my digital copies of DVD that are so quite I have to use headphones. May be adjustable in iTunes but haven't looked into that yet.

I don't have one myself, but I have played with one for countless hours in the apple store, and I had not experienced this. In fact, much to my surprise, I was actually able to put the volume all the way up and hear everything in the store, and as im sure you all know, it gets pretty loud in those apple stores. I do have every intention on getting one so I hope that isn't a widespread problem...

Haven't had an issue with the volume at all. It's nice and loud when I want it to be and whisper quiet when necessary :)
