Specific type of Disk Utility

Is there a disk utility that I can use to clone my Mac Mini HDD to my need 120GB SSD HDD? My issue is that my Mini's HDD has about 5GB of space left out of the 320GB limit due to my large Plex Library of movies and tv shows. I would like to clone the disk but be able to leave those folders out. That way it would fit on my SSD HDD.

Any ideas on how to do this or if it is even possible?

FireWire is generally faster than USB

Yes. Use Mac OS Extended / HFS+ (Journaled) as format (file system).

I only see an option for Mac Os Extended (Journaled) but no option that states HFS+.

Mac OS Extended (Journaled) is okay, HFS+ is the other name for Mac OS Extended.

Apple's Disk Utility in /Applications/Utilities will do it. Click on any drive to see the 'Restore' tab.

not only will that work ...... but it is built into the OS ........
