Which to set the Nikon D40 to and why?

I know adobe is allegedly better (and I am on a Mac). However, mostly my pictures go to 3 places:

My smugmug acccount (see sig), iPhoto on my mac, and Costco's photo center for prints (and sometimes smugmug).

I use adobe rgb for my cinema display's color profile and have set the my D40 to use it as well.

Have at it...

AdobeRGB is not better than sRGB, it is just a wider color space. Which profile to use depends on the intent for your photos. For printing Adobe RGB is better, for web posting sRGB is better.

Now as for the color calibration of your monitor, you have it all wrong. Your Apple Cinema Display should not be set to Adobe RGB. Leave it at the display default profile "Cinema", or invest in a hardware calibrator.
