SSD + Ext HDD - What goes where?

I am about to make the plunge on a new iMAC.
My plan is to purchase with only the internal SSD. I plan to use one or more external FW800 drives for back-up and major video content.
For optimum use of the SSD, what, in addition to the OS, should go there?
Programs? Programs and files? How about photo library after editing?

OS X and apps. Then Windows if you plan to install it. If you do video or photo editing, then you could move the file(s) that are currently in use to the SSD to speed up the editing process.
