I have purchased iTunes movies and I still have no surround option! I use my mac mini as a media center and this is ANNOYING ME!

I haven't purchased any movies from iTunes. However all the digital copy downloads I have from iTunes through redeeming codes that came with certain blue rays I purchased all play with surround sound. The only thing is I have to enable it manually every time in the movies on screen display options once I start playing them. This on a 2011 Mini using an HDMI cable to my surround sound receiver.
 
I have my TOSLINK cable hooked up to my BOSE optical in. 5.1 plays on DVD's and sound is great but when I lick over to surround sound in iTunes it either freezes or has no audio.

 
TOSLINK has never officially been supported by Apple as far as I'm aware and is flaky as well as being hit and miss. I could never get it to work at all in surround sound on my 2009 Mini running Snow Leopard. I have much better luck on my 2011 Mini using HDMI under Lion. Sorry I can't be of help with your problem.
