Odd. I wonder if it has to be over a certain threshold, before it shows the individual data. Merely guessing.
Try a soft reset, and then check it again.

Weird on. On my device, iPhone 11 Pro Max, with iOS 14.1, when I first open the storage page, it is all grey.
Then, within a few seconds, the colours start to show.

What iOS version are you on? Maybe that is partly the issue.

An update for anyone else that might have this issue. I was on with 4 support reps tonight. The third escalated me to senior support and as he was helping me, he looked at his personal phone and had the same issue. He forwarded this issue on and said it seems to be a 14.1 bug.

This has been fixed with 14.2.
Nope, I'm on 14.2 and have the same bug. Only for me, the phone is "making up" 65 gigs of data that isn't real. The bar is fully grey and filled, even though the categories add up to 65 gigs less than my 256 gig phone. So I can't even take a picture now because some sort of imaginary data is blocking it.

On my Mac, I at least can see that there's a grey bar of "other" totaling 65GBs, but I know it's not real. I just got my 12 Pro Max the other day, and it had the right amount of data (190GBs) until today when I tried to sync my phone with my Mac. At first, it was trying to tell me I had twice the amount of music. Now, the Music amount is correct, but it basically just moved to "other" that I can't even see on my phone.

I have this same problem. Running ios 14.2.1

i restored an iPhone 8plus to a iPhone 12 Mini 128gig and it doesnt have the issue.

i restored that same iPhone 12 Mini 128gig to a iPhone 12 Mini 256gig and the larger capacity mini has the issue (see everyone’s screenshots). And no, rebooting, soft resets, hard resets, re-restoring, turning on accessibility home button and resetting RAM, etc... none of that works. This is a straight up BUG.
