Pre ordered last night and received confirmation. Never saw a store pick up option. Is there a way to change it?

You'd have to cancel the order and re-order the device. Check to see if the option is available on the pre-order page before you cancel. If it's shows available for pick up then you can order that and cancel the other.

Okay if that's the case then the Apple store at your location has probably reached their quotas for online order pick ups. Just because it shows unavailable for pick up doesn't mean they are out of stock, they will have plenty but they have to keep certain amount aside for walk-in as well.
