So, after buying and looking to buy a couple different machines I noted this strange strategy on Apple's Online Store:
Prices to max out ram on any given apple...
Macbook from 512mb --> 2gigs, $500 (Apple keeps 2 x 256 sticks)
Macbook Pro from 512mb --> 2gigs, $500 (Apple keeps 1 x 512 stick)
Mac Mini from 512mb --> 2gigs, $300 (Apple keeps 2 x 256 sticks)
iMac from 512mb --> 2gigs, $300 (Apple keeps 1 x 512 stick)
What gives? It's the same exact RAM, and the price to buy 2 x 1Gb for the Macbook, Pro or iMac independantly in the Apple Store is $600. Strange. Good thing you can get 2gigs of ram elsewhere for as low as $140 or so shipped these days...
