I was wondering if it was possible to have a system with multiple ATV2s around the house but stream DIFFERENT music to each one using the Remote app on the iPad and iPhone.

Is that possible using the Remote app?

edit: for purposes of clarification I'd like to have my single iTunes library acting as host for four or five ATV2s sprinkled around the house. I thought that I'd wall-mount an iPad to act as the remote for all of them. I can select the ATV2 I currently have independently from the iTunes library so I assume this will be possible but wanted some confirmation from someone who has tried this.

It certainly is possible. The only practical issue I can think of would be that controlling them all from the same iPad could feasibly be a bit fiddly, as you have to remember to select the correct one. If you're happy with that then I don't see any problem.
 
Yes this is very feasible. I do it all the time with ATV 2's and Airport Expresses. For added fun you can also send different photo album streams to the various ATV2's for different computers. As the other posted mentioned. Be sure and select the correct device when making a song or volume selection Otherwise it works well.
