What’s the best way to mirror my iPad’s screen on my iMac? This would be great for teaching and would make my iPad vastly more useful.

I used airserver for a while. What’s your workflow again? Usually people just use an Apple TV for mirroring.
 
Can Apple TV stream to an iMac? If it can, that's a compelling reason to buy one.

I teach students at my desk. I have an iMac that serves as a screen for pdfs, and I write notes on paper. I could write notes on my iPad and have them streamed to the iMac's screen -- if such a thing were possible.

I believe you can do this via QuickTime over a lightning cable.

I have many tools but prefer to the use the best. I understand your question, and it is quite simple.

Before I answer, may I ask the reason ( the use case, if you will ) to mirror to your Mac?
What is your end goal, I feel your question may be missing the best answer.

Well, that is exactly what you asked for. Thank you for your patience.

I normally share my content a couple of ways:
1) I occasionally AirPlay my iPad to an AppleTV, connected to a projector for the entire audience
2) Create a local network using my Mac, ask everyone to connect to 'mycomputername.local' with their device, then remotely control their view using Node.js
3) When in small group ( 20 or less ) I share my training iPads and remotely control them using AppleClassroom app.

In your case, you should look into purchasing AirServer ( there are other apps that cost more, but I've found AirServer to be the most reliable ) to wirelessly stream your iPad display to the iMac or you can connect a physical lightning cable and mirror via QuickTime.
