Hi

Using AirPort Express in 3-4 rooms at the same time (streaming mp3) + one surfing the internet, is 4 gb ram sufficient?

How does the AirPort Express solution work compared to Sonos?

One 27" imac 3,06 with all the music stored. 3-4 stereos around the house and 3 ipod touch to control it.

Airport express around the house is a cheaper solution than sonos, but does it run just as smooth?

Sounds like my buddy's setup, minus about 3 more computers and an airport express. I believe he has 4GB RAM, and I don't recall his setup ever even hiccuping.
 
When streaming media, your systems RAM is not really the issue (especially with 4GB). Its more about how much data you can put through your network at once. The airport can easily handle 3-4 machines streaming music wirelessly. It can do video to that many machines but I would recommend running wired connections.

Wireless is convenient but I always recommend wired connections whenever possible, you will always get substantially more data through a wired connection.
