I want to get my MBP back on the official release channel. Apple's own instructions for opting out of the beta channel say to use the Details link is System Prefs. Unfortunately, that doesn't exist. Am I stuck doing a clean install?

If you want to stop using the beta of 12.2 now, yes, you’ll have to do a clean install. Otherwise, when 12.2 is released you’ll be able to install that and you’ll be out of the beta program.

Thank @chrfr - my bad, I thought 12.2 was the current release.

Only went beta because I was having so many problems with new MBP.

You don't need to do a clean install. But, you do need to uncheck the "Automatically keep my Mac up to date" box. That way you may remain in the program and you have the choice of whether to update or not.
