I am updating my iMac 5k to the second public beta of El Capitan 10.11.1, after restarting when I completed the download, the "installing software update" screen showed up. Progress bar moved a tiny bit at the first few seconds, but then stopped forever, not moving even a millimetre for more than 15 minutes. I tried to shut down the computer and start over again but the same scenario came up. Any suggestions?

Give it time. There are problems with this update for some (See my post below yours; I have two Macs that will not update!), but the process even if successful is usually slow. Give it a few hours minimum before worrying.

The previous updates (I am a beta tester since Yosemite) took around half an hour to complete, so this time is unusually slow. I will wait one more hour max then I will just give up this update.

Same problem here. I cannot get in my mbp! This is unacceptable!
Stuck in the black screen with apple logo and full bar(of installation).
How can I get my working mac back?

Just hold the power button to shut it down, then it should normally boot when you power on again.

Restart & hold down cmd + R & if you have Time Machine you can roll back to Yosemite
