Stuck on Encrypting

My external drives are stuck on Encrypting... It's been like this for a few days. Does anyone know how to resolve it? They mount but takes ages to come up. I had to reboot the system two days into the process. Each drive is 8TB

Let it run, or erase them. Those are your two options.

I'd set the Mac to never sleep & let it run overnight, plugged into power if it's a laptop.

Yes it will.
8TB could take a very long time, depending on the amount of data already in them.

Just use your Mac as normal and reboot whenever you need to.

This command in terminal should show you the encryption progress (assuming your disks are APFS formatted):
diskutil apfs list | grep -i encrypt
