My external drives are stuck on Encrypting... It's been like this for a few days. Does anyone know how to resolve it? They mount but takes ages to come up. I had to reboot the system two days into the process. Each drive is 8TB

Thank you, do you think it will resume even though I had to reboot?

Hopefully ¯\_(ツ)_/¯

I'd set the Mac to never sleep & let it run overnight, plugged into power if it's a laptop.

Yes it will.
8TB could take a very long time, depending on the amount of data already in them.

Just use your Mac as normal and reboot whenever you need to.
