Other phones were iPhone X and iPhone 7+ It works fine for note taking. Much better than using your finger!Those “other phones” were maybe designed to use a stylus. If you try on the MAX you would not be able to rest your hand on the screen as it does not have palm rejection. You can try but I am betting not.

Depends on the size and width of your fingers. The Max size would work great with a Note 9 type sPen.Kind of unrelated:
That was the one bogus rumor I never believed this year, that Apple Pencil support was coming to the 6.5 Max. I don’t know that Apple will ever conflate the Apple Pencil to the iPhone, as I think that’s more intended for sketching/drawing/editing for the iPad. I think iPhone works perfectly fine the way it is without using a stylus.
