Is there a way to subscribe to Podcasts in iOS and have them automatically download as soon as a new episode is available like the desktop version of iTunes?

Unfortunately no,

But iOS 5 did introduce automatic background updates with Newsstand, so hopefully that can make its way over to the iTunes app for Podcast.

I'm crossing my fingers.

As posted, it's not possible yet. Check out the app "Downcast" in the app store. It does exactly what you want, plus gives you the option to stream over 3G as well. It has a RSS feed so if you listen to a podcast that isn't in the iTunes library you can add it manually. I've been using Downcast for 2 months now, and I won't go back until Apple adds this function into iOS.

I've been using the app Podcaster for a while now but I think I'll switch over to Downcast. It appears to have more features and looks quite a bit more ipad friendly.

I use Downcast as well, It's a definatly a good app. The only thing I wish it would do was automatically check for new episodes in the background without having to open the app but i'm sure the developer said that Apple doesn't allow an app to run all the time in the background or something and if they ever allowed it this functionality would be added.
