I was wondering if it was possible to put subtitles for the tv shows bought on the itunes video store?

not without layering them in yourself with a video editing app. Nevertheless, they're near impossible to read... i tried Amelie the other day... biiig headache.
 
QuickTime allows you to add a text track to media files. I've never done it, but I know that it's doable.

You might also be able to add closed captions to the video itself to be decoded by the TV set. These are different from video subtitles, which are usually handled as video overlays, CC are stored as ASCII.
