After reading all the horror stories in this forum about people having troubles driving two 4k displays with even the top of the line 2018 Mac minis, I was prepared to return my new purchase of an entry level 2018 Mac mini and 2x LG 27UD88.
I'm happy to report that it is flawless as long as you keep the scaling to either 2x or full 4k. I can't stand the way scaling makes the fonts look, and the UI is perfect at 2x when viewing from the distance that I like to work at. If you try and do non-inter scaling, i.e. looks like 1440p, then there is some frame dropping in mission control, otherwise perfectly usable.
On a side note, I'm also happy to report that my mini does not have any coil whine, and that it is mostly dead silent.
I absolutely love this setup, and use it mainly for coding and also some heavy spread sheets. I might even consider getting an eGPU to do some occasional gaming, even though I have not done that for years.
