Just got around to installing iPadOS/iOS beta 3 and play around with the external drive support. For non encrypted supported file systems is great, but I was wondering if anyone has had success getting an encrypted (APFS or HFS+) drive to connect, if there are any resources in the forums/web regarding this, or if there is any wording from Apple regarding whether to expect or not this for the release version. Thanks!

Nope. Not this time around at least. It's explicitly stated that non-encrypted drives are supported. A little disappointing for sure.
