Hello,
Precisly Big Sur. Supported until September 2023.

So, I think keep this OS (because I find why I switch, all is easier for me and I believe on OS by year is, same to me : disabled).

However upgrade App : when stop them ? (Office for example)
I can doing her until ?
Same for Safari ?
When change this Firefox ?
I can wait on September 2023 ?

Have a nice day.

Office will probably keep on being updated for Big Sur until Apple stops doing security updates for Big Sur in a few years. Safari updates will stop at that point too.

Firefox should get updates for longer.

Hello ! I hope you feel well, all.

Do you know OS 11 will be supported by Apple ?
I'm sure it will be supported - macOS Big Sur 11 should be supported a little while longer. It will probably receive a couple security Updates related to Safari. And probably a few other updates as Apple seems fit.
There's going to be a big push to move us to macOS Monterey and for that reason I don't think there will be much, if any, feature updates to macOS Big Sur.

This is all speculation by me. I don't know any better than the next person. It's pointless to go deeper into speculating about Apple's intentions moving forward other than what we see as users.

Let our brains have a rest from all the speculating and just see what's new.

I also got the impression that you already answered this question in your original comment here by saying that macOS Big Sur is supported until September of 2023.

Safari receives updates around two years, same as macOS usually.
Office will be supported for a long time and Firefox too.
I used macOS High Sierra from 2018 to 2021 till I got a new Mac and Apple stopped supporting High Sierra completely this year.

Something to keep in mind when planning an upgrade path is that Apple does not have a formal, publicly announced policy for OS and application support. All outsiders have to go on is Apple's past actions which, as Apple often demonstrates, are not a good predictor of future actions.

In any case, this is a good history of Apple's macOS support:

For non-OS software, it is not a good idea to skip updates because a lot of updates are issued in response to security and privacy threats.

So I'm no too wrong when I'm taking charge until September October 2023 ??
I think the decision depends on how you use your Mac (business? home use? photography? etc.) and if Monterey offers enough new features to make the time spent upgrading worthwhile for you. In addition, if an application or utility you rely on begins requiring Monterey, you will be forced to upgrade.

So, unfortunately, I don't think there is a single answer here. But it is usually worthwhile to wait for Apple to update a recently released macOS two or three times before installing if your workflow allows. Then you can avoid early bugs and instability problems.

Apple should support older systems longer than two years. In case of Mojave it was even less. No security updates in september.

Hello,
I'm disabled. So use iMac just basics things.

I can stay on OS 11.6 during now until the next MacOS (probably in October 2022 ?) ?

iMac was a present in last of 2017. Beginning Sierra, more High Sierra, Mojave. Since 10.15 I had a lot of problem.
I must had to by an Externe SSD (500 Go). I had lost more things. Big Sure here, I'm well on MacOS same to 2017.

I'll be on Monterey when it launches. I have Beta 8 and 9 installed and need to put up 10 but I've been busy. I really liked the first couple of Betas and had a few problems with the middle-numbers. But I overall like what I see. I think that Monterey is even more efficient than Big Sur. I will run it using OCLP on my 2014 MacBook Pro 15 (which isn't officially supported). I plan to sell my 2015 MacBook Pro 15.
