I have a 2014 Mac Mini w/ 8 gigs ram and 1 TB of HD. I have an external 256 gb SSD drive. To speed up the whole thing I was pondering using the SSD as a swap file/drive. Is this doable (if so, how??) ?? Would it improve the speed of my relatively ancient machine ??

How much free space is on the SSD now?
If it's more than 20gb or so, that's probably "large enough" to handle the swap file(s) with ease.

If "the speed" (as it's set up now with even an SSD) is bothering you, perhaps it might be time to take a good look at the 2018 Mini lineup... ;)
 
I have 188 gigs of free space on that SSD..I will be buying a new Mini later in 2019 but will have to tune up this one until then...Is there a utility available to alter the swap file drive (from internal HD to another ??)
