My wife and I have 13 Pros activated with T-Mobile, and our 14 Pros are arriving today esim. We are contemplating a switch to Verizon but, for various reasons, aren’t ready to make the switch for the next couple of months.

If we activate our 14 Pros with esim on T-Mobile now, could we switch the esim to Verizon down the road? Or does the 14 Pro become locked to T-Mobile in the US?

Not sure if it makes a difference, but we get our iPhones through the iPhone Upgrade Program.

If you got them through Apple iPhone Upgrade Program it's unlocked. When you switch Verizon will ask for your T-Mobile account details to keep your number and your phones IMEI 2 and EID information to send a notification to your phone to activate the Verizon eSIM profile.

If you bought from Apple then they should be unlocked. If you bought from T-Mobile then you might need to pay them off first.
