Right now I have a Windows XP pro box running as a file server for all my media that streams to the apple tv. I do not even have a monitor hooked up to it, i just use my MB to control it. I have this set up as my web server, ftp server, and VPN server. I have looked at the new OS X Server and found it fascinating. The mail and ical server has to be better then the exchange server I have been messing around with but never can get working. The specs for the server software are really reasonable and have been looking to purchase a used powermac G5. I have some concerns, all the hard drives I have now are sata drives and was wonder if there is a good card out that that will work with the G5 and is not overly priced, how many hard drive bays does the G5 cases hold, and does itunes run on the server software and does it work with the appletv.
