Can I sync multiple Apps at once? For example, I have an App called Things and one called Bento. With the release of iOS 5 do I still have to manually invoke a sync from within each App itself?

I am sorry... Could you elaborate? Is that a no to the syncing multiple Apps at once? What did you mean by "If they have been updated to sync?"

It depends on the type of syncing. Things is so barbaric in its wifi syncing, but they're promising a cloud service, but I'm sure that will cost money. Bento should be compatible with your Bento library on your desktop, and depending upon how that's syncing you should be fine to sync that database and Things.

Some apps sync via Dropbox or iCloud, and I think that's what Ashwood11 was getting at in his response. If an app is not updated to make syncing possible, you can't do it.

Umm...the iCloud service is already here and anyone with an iOS device gets 5G of storage free, but nice theory.

Why is Wifi syncing barbaric? It's not barbaric for the purposes of syncing iOS, but it's barbaric in terms of something like Things from Cultured Code or any other app that requires you to have both your devices on the same network and the apps launched at the same time. In a day of Dropbox syncing or iCloud syncing, it should be relatively seamless and ready to go at launch.

As for the OPs question, He seemed to be asking about apps individually and not the OS as a whole. There are some apps (like Things, which he asked about specifically) that don't have Dropbox or iCloud syncing, and that's what I was getting at for him. Just because the service is available doesn't mean all developers are using it.

Actually Cultured Code has already said that the cloud sync solution for the Things app will be free. Would have been nice if they had used iCloud but apparently they decided that rolling their own solution would be best.
