So before, I used to sync the notes from my iPhone to my computer, they would appear in the mail app, now the notes have been moved to an app on their own, the option to sync notes is gone from iTunes, and I can only use them on the cloud with an @me email account according to the computer and iPhone?

Is this right?

Syncing works the same way as it did before. You don't need an iCloud email address.

There is now no notes option in iTunes at all. Click notes in iCloud settings and it asks for a @me email address to be set up

I had the same issue. What I did is create a gmail account solely to sync notes to.

Just checked this with my Lion iMac, the notes checkbox is still there in itunes, but with ML, it is now gone, the only way to sync notes is to use iCloud, but this asks me to create an @me email address, which you can't do any more.

You can definitely do that right on your phone/iPad when it asks you to create it. Takes two seconds and associates that me.com address with your appleID. I did it last night. The only annoying part that I ran across was that it wouldn't resurrect my old me.com account. So I had to create a new one.

Any new notes from that point on will appear on all devices, provided that you are using iCloud as the default account in notes.

Notes propagating across devices is actually blazing fast. Pretty neat.
