If I update an iPad to iOS 5 and then reset it, set it up as a new device without a computer so it is completely standalone, how do I add music from iTunes without changing anything else on the iPad and what happens when I connect it to iTunes the first time?

Go to iTunes (on the iPad)
Then go to the purchased tab on the bottom
Re-download all the songs (you can re-download for free)

or if you use itunes match you can have your entire music library with you at all times.

x2 on iTunes match. Enable it in iTunes and in your settings on your iPad. Flip the switch to show all music and all of your music should show up in your music app.
