I'm new to the iPhone / iTunes world so please bear with me.

When I try to sync my iPhone contacts with Google contacts the info is never transfered exactly the way it is in the iPhone. The first sync seemed to go pretty good except for a few contacts that I thought I could delete and re-sync but when I did that it deleted them from my iPhone instead of trying to make Google contacts match what was on my iPhone. I'm trying to make the iPhone the "standard" and want everything to match it, kinda a "one-way" sync but it doesn't seem to work that way. Is there something better that anyone has found (I'm still on Windows)? I've tried Windows address book (fields don't always seem to match up) and Yahoo (does the same thing as Google except with more annoying ads) and I can't afford MobileMe.

Next, what is the best way to move videos and photos OFF of the iPhone to a Windows computer? I thought that was what the iTunes interface was for (to manage files on the iPhone). I want to be able to move items from the iPhone, not SYNC the two to be identical. Am I not understanding a critical piece of the puzzle?

You can move them off of the camera roll by treating it just like any other camera you would hook up. iTunes is for managing everything BUT photos and videos in the camera app.
