As in the title, I can't seem to open the System Information App, or even the 'About this Mac' in the menu bar. The Application isn't showing the correct App image either for some reason, and when trying to open just gives me a 'The application “System Information” can’t be opened.' message. Any help guys? :/

I know this is typically a generic response to any problem people have with their Mac, but have you tried repairing disk permissions? This is the exact type of thing it's supposed to fix. Does the system information icon show up in the dock for a second?

I had the same problem. It turns out a while back that I changed the name of the Utilities folder. Once I changed that folder back to its default name, I was able to open the System Information application.
