If I put “tags” in my Notes now (#this or #that, etc.) when I upgrade to iPadOS 15 will it recognize them as tags?

Good question.
And also, if i install public beta on my iPad, what will it look like on my iPhone with ios 14?

When I add a tag to a note on my iPhone running iOS 14.5.1, it's not recognized as a tag on my iPad running iPadOS 15b2. Also...if I add a tag to a note on my iPad but don't press enter or space after it then that isn't recognized either. It would seem notes has to specifically register the tags at the time of entry and isn't just looking for anything that looks like a #tag.

Tags entered on my iPad running the beta show as grey text on my iPhone. On my iPhone I can delete the whole tag but can't modify it or even delete single characters, so they're definitely registered as something other than plain text within the note.

No problem. :)

The first screenshot shows the 2 tags created on different devices. On both the beta...and 14.5.1...if I place the cursor at the end of the tag that was created on the beta and press delete, it selects the tag as shown in the second screenshot. A second press of the delete key deletes the tag as you would expect. If I undo the delete, even on 14.5.1, the tag will reappear as a tag...not just text.
