Do these even exist? Searching on Amazon just shows TB 3 to DP adapters, and a bunch of other adapters with "NOT TB 2" in the title. The apple one is pretty pricey and I'm only going to use it once to transfer data from my old trashcan to my new MBP, since I figure USB is too slow (~800GB to transfer and I can't be bothered to wait all day). Is there a faster method? Ethernet maybe?

USB3 will work fine.
Just use that.

I'd recommend using a 1tb USB3 drive.
You haven't told us the size of the internal drive in the Mac Pro, but you could use either CarbonCopyCloner or SuperDuper to create a cloned backup.

Then... either use setup assistant (during the initial setup procedure), or, do a "manual copy" later on.
But you must take care to avoid permissions problems if you do the file transfers "by hand"...
