I recently saved about 650GB of data on to an external HDD, formatted as MacOS Extended (Journaled), then decided to encrypt it. It started at about 18:00 yesterday, and today, at 10:35 it is still going. The only information in Finder is 'Encrypting' (greyed out).
The following Terminal entry: diskutil cs list should show progress, but instead returns 'No CoreStorage logical volume groups found'

What's going on?

A while ago John Daniels author of Etrecheck told me:

diskutil apfs list -plist

Then search for “CryptoMigrationProgressPercent”

It worked at that time.

This assumes your disk is APFS of course. You could try same without APFS.

I have noted the following in my library of Terminal commands, but not used it for a while:

diskutil cs list | grep -e "Conversion" -e then drag volume here
