Tethering Mac to a iPhone for internet use only/always the 2nd SIM installed.

While traveling abroad I like to get a second local SIM and put this in the iPhone. It has one slot for a physical second SIM. This second SIM I would use for surfing and other data tasks while abroad (is much cheaper as my local providers roaming charges).

What interests me is how to set this up so that for internet and surfing only the second SIM is used. And never my home eSIM.

I could not find any information so far, so am hoping somebody here has some tips or knows where to find the information.
