I'm currently on a great 6GB plan with Verizon, but the problem is that they don't offer tethering for the plan I'm on (Maxx plan with Edge). If I were to jailbreak my phone, and tether every so often (about 6 hours per month), would they find out? If they found out, what would happen?

Also, is there a jailbreak available for the 5S? And what tethering app do people recommend?

They might. You never know
If they found out, what would happen?
I'm not a Verizon customer, but my guess would be that they would charge you per MB used and/or require you to switch to a plan that includes tethering.
Also, is there a jailbreak available for the 5S?

I use TetherMe. You can never tell because the carriers have ways to determine if the data is coming from your phone directly or being passed to a tethered device.

I chose TetherMe because in my research it was the one that users reported getting caught on the least. Most users got caught using MyWi and other tethering apps the most according to all I read.

In my case, I pay Sprint $20/month for a 2GB hotspot so if Sprint IS looking at me they see that I've got a legit plan. I haven't been able to test this yet though because LTE is still crap in my area and forget tethering on 3G.

I have been tethering with verizon for years. They really don't care about it like some other carriers. I use TetherMe and it works great.
 
I've been teathering from my unlimited plan for years too. Never had a problem. But the great thing about verizon is if your on unlimited data they offer the option for unlimited hot spot for $29 extra a month. That's if you don't want to jailbreak.
 
VZW can't stop you from tethering using a third-party application as part of their agreement to license some of the frequencies they use. Pay $5 for TetherMe and do it as much as you want.
