Is there a way to change the text blurbs color without jailbraking the iPhone? Is there a way to SSH? In case you can't tell, I am a total beginner to this stuff.

In order to install OpenSSH you need Cydia. Your phone is locked for any system modifications unless you jailbreak it. No other way... So, first you need to JB your phone, it will install Cydia after JB, and only after that you can use SSH to modify pop-up blurb...
 
don't think you can change text bubble colours on 3.0 yet. you used to be able to on 2.x but obviously now that text is landscape these themes do not work so need to be rewritten. i would imagine that themes will be released over the coming weeks that will let you change it.

I tried one of the text balloon mods in Cydia, enabled in Winterboard, no change.

I think you are correct, they need to be updated.
