If I'm running my Macbook pro using Boot Camp in OS X, is there any kind of video settings that you need to enable before running TF2? And once you are in the Windows environment, can you install the omega drivers normally for the video card?

I am just wondering since before, in VMWare, you had to enable 3D graphics acceleration from Settings and you could not install the normal video card drivers as you would in a normal PC desktop. Is this the case for Boot Camp too?

Boot Camp is not virtual hardware. It is a full blown Windows installation.
 
The reason you couldn't do it under Fusion is that it emulates the hardware. Under bootcamp you have access to the real hardware. You should have no problems.
