Here, there and over there
This is why I leave the 16" M1 Max MacBook Pro at home and bring a borrowed 14" M3 MacBook Pro with me on trips. There's barely enough room for the 14".

I recently downsized from a 16" to a 14" and I'm surprised that I don't really miss the extra screen space. With the way I work, most of that extra space was wasted. It was nice to have, but it wasn't enough room to squeeze in another window. It just made it easier for me to switch between windows I had open because it was easier to see and find them.

this is why I often take my 16"MBP... time working on site and in hotel room >> time on plane. nap time for the plane!
On the plane, I'm usually working nonstop on my Powerpoint slides for my colloquium talk when I land. In this case, it's after my talks, and I'm processing panorama pictures of Tokyo. I'm a keen amateur photographer.

11" iPad Pro FTW.

I use Lightroom mobile on it to edit photos on the go. I mostly write on it because the pencil takes up less mass than the ridiculous keyboard cover.

Also I travel light so I can do a whole week in a 20L bag which goes in the cabin with me. That includes mirrorless camera and all clothes etc :)

Yep, I don’t leave my slides till last minute. Just different time management skills, but prefer to go over facts and figures prior to my presentations. And I use Lightroom classic for my panoramas taken with my 60 MP sony A7RV, but prefer to edit on a large 6k display to get into the details. And the larger 16 MBP screen is useful for working on the ground. I hate crowded windows. Different perspectives, but that’s why I always say choice is good. You’re happy, I’m happy. Besides, if I really wanted to work plenty of room in business class, but I prefer to enjoy the Sake. Cheers!

Don't know how you manage that. I have 2 camera bodies and 5 lenses plus filters and spare batteries etc. Goes into my backpack. Then I have a laptop bag. Then two full size suitcases. One is work clothes, running shoes etc., and obligatory gifts for people at the destination. Then they give me gifts to take home. The other contains a trifold bike, helmet, cycling shoes, lighting and clothing for winter.

I never get to go business class as the invitations I get from funding sources only specify economy. If I did get business, I'd lie flat and sleep the whole way. Still, I count myself lucky to be invited a couple times a year.
 
OP, when I fly I always wear latex gloves during the whole flight for sanitization reasons. And I carry a box of wipes with me so I can wipe down my seat, tray, arm rests before sitting on it. Airplane seats and trays never get wiped down ever and are a nest for germs and bacteria. Then when I land I dispose of the gloves.

One very light camera body (nikon Z50ii) and one utility zoom lens (18-140mm), iPad, two changes of clothes, power bank and essentials and that’s it.

I found out it’s easier to get an Airbnb with a washing machine than cart clothes around the planet. There’s no dress code at work so any work travel is the same as anything else: utility clothes.

As for gifts, we tend to avoid them.

Travel bag … that is literally it!

Regular air travel has deteriorated every year for 60+ years, especially the way customers are shoehorned into seat spaces. I gave up on using the 15"-16" MBPs while flying, instead choosing an iPad for image review or for consumption only.

I am surprised
A) that one can just switch to someone else's 14" computer and perform real enterprise-critical work in today's cramped seat spaces and
B) that one finds a 14" workable when a 16" is not.

When I do real work it usually also involves paper and multiple database files not maintained via remote server. So I need my MBP with its files, all its screen real estate, hopefully an external display at my destination and also paper files. So I just consume tablet nonsense and sleep while on the plane with its ever-shrinking seats. Real work gets done at destination.

But does it fit inside the safe deposit box in the hotel room? This is one reason I take my old-faithful 2014 13" MBAir everywhere when I travel. Once took my 15" and it wouldn't fit inside the Europe-size hotel safe deposit boxes.

When I had a 15" MBP, I found that they barely fit in most safe deposit boxes. It wasn't an exercise for the spatially challenged. My wife always had to get me to deposit and retrieve the laptop because she was afraid she'd end up carving a mm of aluminum off of the MBP's case twisting, turning, and banging it around.
