Everytime I click "Check for Update" iTunes keeps telling me "This version of the iPhone software (1.0.2) is the current version"... But it's not 1.1.1!!

You have to update your computer to 10.4.10 before you see the update. to 1.1.1. That is if you are on a mac. If you are one a PC I have no idea.

If on a PC, most likely the version of iTunes is out of date and needs updating.
