Does the Time Machine see the Fusion Drive as one drive as backup as such? I am getting an iMac with a Fusion Drive but will of course be getting a Time Machine in case anything happens. Will I be able to restore to an External HD from the Time Machine Back up seeing as the 2017 iMac drives are not user serviceable?
 
Yes, Fusion Drive is seen as a single drive by Time Machine. Yes, you'll have no problem restoring from Time Machine to any other Mac, whether it has a spinning HDD, Fusion Drive, or all Flash (SSD). Same thing if you are booting your Mac off of an external HD. First, you'd set up the external drive as a bootable drive, then you'd be able to restore to it from Time Machine.
