Okay so I have the late 2012 27in iMac. It still works pretty decent only a few minor issues with pixels bleeding from bright windows and it can’t really keep up 100% with playing games (WoW and LoL) but still overall playable.

It’s a working computer in great condition for how old it is, but my question is how do you ultimately decide when it’s time to upgrade?

I know this is a super opinionated question... I’d just like to here some other opinions as I am sitting here trying to decide what to do. Obviously I want to upgrade because who doesn’t like shiny new iMacs but I’m just having a hard time fully committing to the purchase because really there’s nothing wrong with my current machine other than typical aging issues considering it’s almost 8 years old.

If it's still working for you and still fulfils your needs, keep it and wait. It's the single and best rule ever.

You still have a decent machine and seem to keep them for a while. That's why I'd wait for Apple Silicon iMac which kind of guarantee a longer support than Intel Mac when we speak for longer than 5-6 years.
 
8 years is "long enough" to wait between new Macs. At least, it is for me.

However... I'd suggest that you "hold out" just a bit longer until the Black Friday sales.
We may see some nice prices on 2020 27" iMacs.

Or... wait until the 2020 models start showing up as Apple refurbs.

It would help if you'd review all the buying options now, and decide on one or two configurations that you'd pick ... IF you decide to get one.
