Will touch id ever come back to a newer iPad Pro or no ? I know I am weird I prefer touch id!

Probably not, because Face ID is more secure statistically and frictionless - you watch the screen anyway when you want to use your iPad.
 
I wouldn’t mind if it returned to the phone (while keeping Face ID)... but ever since getting my 11 Pro ... Face ID on this iPad is absolutely amazing. Love how I can just hit a key on my Bluetooth keyboard and the iPad unlocks and goes to the app I was using. Face ID is perfect for my workflow.
 
Honestly, since I got my iPad Pro 11” I very much prefer having Face ID. I don‘t have to constantly reach over and use my fingerprint for any type of approval. It just captures my face within seconds - so fast and easy! I wouldn’t want Touch ID back. At least not for the iPad.

How do people in surgical mask countries (or medical industry) deal with FaceID?

I love FaceID but my kid was sick recently so I wore a surgical mask. FaceID was suddenly the most annoying thing in the world. I had to change my secure password to a simple 4 digit just to reduce the annoyance. So I now understand why some people still want TouchID to exist alongside FaceID.

It's worse for me on my 11" iPad v my 11 pro iPhone, iPad doesn't work as well in dark or on a desk as further away, I've had it for over a year so am use to it, but the failures would be 10-1 v my phone.

I don't think Apple would regress back.
At the same time, I think the non-Pro iPads will stick to TouchID, as an obvious point of differentiation for the much more expensive Pros.

It's not weird to prefer one over the other. There are instances when one biometric is more practical than the other.
 
I also prefer Touch ID, as well as thick bezels for easier holding, and occasionally the headphone port comes in very handy. That’s why I’m staying with my 2nd gen 12.9”. I don’t see Apple going back to this design any time soon. Just hoping it lasts forever. :(

Same here. For now given that I don't find much value in FaceID, the new Pencil design or the new Keyboard/Folio design there's no reason for me to upgrade other than a minor performance bump. It's all subjective really. Maybe that will change in the future once iPadOS adds features that require specific hardware, but until then as long as I'm able to keep AppleCare+ (just converted from prepaid to monthly this month) I'm fine with the Gen 2 12.9" as well.
