ever since updating to iOS 15 if I tap an app to open it just brings up a secondary edit menu: top option is "delete app" but I can never actually tap to open the actual app. What setting do I have set wrong? Any insights would be welcome as this is becoming extremely frustrating

I did try searching just not sure I'm explaining it correctly to google. So hopefully someone can understand my vagueness
 
Normally to open an app you quickly tap the icon. If you touch the app icon and hold it will open the drop down menu. That is how it works on my iPhone 13 running iOS 15.2

You might try shutting it down - hold the power button and one of the volume buttons until the power off screen shows. Slide the power off slider and let it shut down. Wait a bit and then press and hold the power button until you see the apple logo. That will clear out junk.

One more thing - when I updated to 15.2 I discovered several things it reset. Really didn't appreciate it. One I found involved turning back on location for Find My which to me, is a big deal.
